Horses for Courses

When the horses have galloped

Gallantly into courses

And entered man’s menu

Disguised as beef

What is the beef?

‘Never mind if it is a delicacy in France,

But the problem is I am not French.’

What else do we have in disguise?

Dog? Cat? Frog? Snake?
